INGREDIENTS (4 pers.):- 5 nectarines
- 2 files
- 70 g of sugar
- 60 g pasteurized egg whites
Put a saucepan on the fire with 1 dl of water and 50 g of sugar. Let simmer until the sugar dissolves, stirring occasionally with a wooden spoon. Remove from heat and let cool.
Cut the nectarines, remove the bone and chop the pulp. Put the nectarines, the juice of a lime and the syrup prepared in the previous step in a blender glass. Crush with blender and add a little cold water if it is too thick.
Make juice and grate the other file. Mount the egg whites until stiff with snow while adding the juice and the zest of the lime and sugar. Serve very cold.
